Stuffed Nopales with Panela Cheese

Ingredients:
* 1 lb of cleaned nopales
* 1 panela cheese
* 3 eggs
* Flour
* Salt to taste
* 2 cups of water
Instructions: 1️⃣ In a pan, add the nopales with 2 cups of water and salt. Cover and boil for 5 minutes.
2️⃣ Once cooked, drain the nopales and let them cool.
3️⃣ Beat the egg whites until they reach the turrón (stiff) point. Then, beat the yolks separately and mix them with the egg whites.
4️⃣ Cut the nopales in half and slice the panela cheese. Place the cheese on one half of the nopal and cover with the other half. Use toothpicks to hold them together.
5️⃣ Coat the stuffed nopales in flour, dip them in the egg batter, and fry them in hot oil.
6️⃣ Serve and enjoy with rice and salsa!
Guajillo and Árbol Chile Sauce 🌶️
Ingredients:
* 2 guajillo chiles
* 5 árbol chiles
* 2 tomatoes
* ¼ onion
* 3 peppercorns
* 1 garlic clove
* 1 clove
* 2 cups of water
* Salt to taste
Instructions: 1️⃣ Boil all ingredients in a pan.
2️⃣ Blend and serve to enjoy.
